We had ham, glazed carrots and bacon potato salad. The ham was good. It was a spiral cut from Super Target. The carrots and potatoes were dishes I whipped up last minute because we took a long afternoon nap. I’m not a huge fan of ham or cooked carrots. I’m not sure what inspired this meal plan, but it was good. Really good! The potato salad was inspired by Tana. She’s all about potato salad. You can’t knit with her on a Saturday afternoon without coming home and thinking, “I need to make some potato salad.”
1 lb frozen carrot coins, microwaved until warm
1/4 c brown sugar
1 T butter
1/4 t vanilla
Melt the butter and brown sugar in a sauce pan. Add the carrots. Stir until glazed. Remove from heat and stir in vanilla. Note: This is a lot less butter and brown sugar than most recipes call for, so don’t expect a super duper glaze. It’s light with a hint of sweetness.
Bacon Potato Salad
2 slices of turkey bacon cooked and chopped
4 baking potatoes microwaved in jackets
3 T light mayo
2 T light olive oil
salt and pepper
When the potatoes are cool enough to handle, peel and chop into 1 inch cubes. Combine with other ingredients. Serve while warm. Yum!
